Egg Fried Rice


I’ve pondered long and hard what recipe to blog about because food is vital for health, body and mind. After much thought, I decided to share with you the humble and simply delicious, in my opinion, Egg Fried Rice, which can be changed and modified for any occassion.

Why  Egg Fried Rice, you might ask? Well, for starters, this dish is very easy to cook, can be used as a quick meal and for others can be cheap to buy the ingredients and make it in advanced. It is a simple dish and sure fills the stomach, for which also provides protein and carbohydrates. It is also popular in most chinese restaurants and take-aways. Who doesn't love a good take-away?

Some people would buy frozen egg fried rice from supermarkets, for £1.00, instead of making it at home. However, at home you decide what you want in the food and of course you can measure what goes in to count calories, if on a diet.

This is a version of the no-frills Egg Fried Rice. Super simple and serves two people.

Ingredients:

👉 Two cups of rice bowls, cold cooked rice
👉 Two eggs, lightly beaten
👉 Four shallots (thinly sliced)

Seasoning :

👉 One to Two tsp of light soy sauce
👅 Salt and pepper to add taste

Garnishing:

👉 Chopped spring onions, sliced cucumbers and tomatoes

Instructions

Heat one to two tablespoons of oil in a wok and fry the shallots until they are a fragrant and light brown colour. Remove fried shallots.

Whilst oil is still hot, add the rice and stir-fry well. Pour in seasoning and continue to stir-fry for about three minutes. Pour in eggs and fry until properly cooked. The rice should be coated and yellowish-brown in colour.
Sprinkle the fried shallots over the rice. Dish out and serve with garnishing.

Other Tips

👉 You can also use brown rice to experiment with this recipe, as some people might not like white rice.
👉 Garnish with whatever you want like sweetcorn, peas, slices of ham or add pieces of chicken breast for more protein in your meal.
